Fava shoots are the green tender tips of the fava plant (yes, the ones you can harvest fava beans from). They have a nutty flavour and jam packed with nutrients. One of the first vegetables you can harvest early in the spring, before other vegetables are ready. You can cook them just like pea shoots.
Pan Fried Fava Greens
1 lb Fava Greens
1 tbs Butter
Seasoning (to taste)
1. Heat butter in frying pan and add fava greens.
2. Cook over high heat until the greens are wilted but bright green.
3. Season and serve.
Notes: you can season these greens with your favorite seasoning, to just simple salt, paprika, hoisin sauce, soy sauce, lemon juice or anything else you can think of!
